This is my GO TO pasta!! I pull this one out when it MATTERS ... and when I simply want the best pasta I can imagine!!! TRUST ME on this one!!  Go buy the finest Crusty Bread and Italian Red Wine and transport yourself to your favorite Italian cafe in your favorite Italian city!!!!

Ingredients

  • 1/4 cup Extra Virgin Olive Oil
  • 2 medium Onions, finely chopped
  • 4 ribs Celery, finely chopped
  • 2 Carrots, finely chopped
  • 7 cloves Garlic, finely chopped
  • 1 lb. Ground Veal
  • 1 lb. Ground Pork
  • 6 oz. Pancetta, ground in food processor (Grind until it becomes a ball and pulls away from the sides of the processor)
